This word would appear to be derived from 'speleology', which according to Wikipedia is the scientific term for the study of caves. Wikipedia also implies that the term 'caving' is used on both sides of the Atlantic for the activity of exploring caves, but 'spelunking' is also used in North America while 'potholing' is used in the UK.
